The American kitchen can be divided into three unique cooking styles. Cajun cuisine, Mexican cuisine and Creole cuisine.

The Cajun kitchen came in the period around 1764-85 with the French fugitives to Canada. They were workers and preferred to eat stew dishes called Gumbos. Later, they moved to the Southern States - Louisiana region, and brought their taste for spicy dishes with them. Here in Louisiana it developed the Cajun cuisine over time and changed with the surrounding influences. Many Cajun dishes are made with bacon.

Culinary use

For example, I love sweet potatoes with the spicy Cajun spice mix. Cut the sweet potato into slices and sprinkle them with a mixture of 3 tablespoons oil, a little bit of lemon juice and 1 tablespoon Cajun spices. Season everything with salt and put the potatoes in the oven under the grill until they are well colored and have a nice crust. Absolutely fantastic, ate it to a T-Bone Steak.

The Cajun blend goes very well with cooked beans. To do this, place bacon in a pan and fry it vigorously, then add 1 glass of white (pre-cooked) beans and a can of chopped tomatoes. Some tomato concentrate, salt and 1 tablespoon of Cajun spice mixture. You want it to burn some more? Add a few Bird Eyes chili pods.

Typical Cajun dishes are Dirty Rice (rice cooked with chicken liver), gumbo, jambalaya, fried catfish, cornbread.
